“TaiPing” Noodles
Two large suitcases leaned stilly on the wall; a car had stopped in front of the house for a while. Time had flown by; the three weeks of my China trip had come to an end. Even though my friends were not coming to say goodbye, I chatted with them on the phone. Relatives were busy working, but they told me to take care before they left for work. My grandma got up really early that morning to cook a bowl of “TaiPing” noodles for me. It was really cold this year in China, however, my grandma, an eighty six year old woman, would rather give up her sleeping time and warm bed to spend time with her granddaughter. She put two boiled eggs, strands of seaweed, and peanuts on the top of the noodles, which is generally saved for a birthday celebration, but I had not been around for my birthday in so many years, that they felt as though it was appropriate. There is a tradition in China that when family members leave home, family members would cook a bowl of “TaiPing” noodles for them. It means, “They hope their family members have a safe trip.”
My grandpa insisted that he would take me to the airport even though the doctor asked him to rest. As I stepped out of my house, I was browsing through the halls of the house that I had lived in for the first nineteen years of my life. I knew I would miss this place because it is so full of memories from my childhood. The car engine stalled, but after a while, seemingly reluctantly, it started up. I began to leave that familiar street behind me once again, but the meaning of “TaiPing” noodle would stay with me always.
Ingredients:
Four cups of water, one teaspoon of salt, one teaspoon of rice wine, one teaspoon of duck oil, one teaspoon of sugar, a package of “TaiPing” noodles, two eggs, peanuts, a handful of dried purple seaweed strands.
Directions:
1. Boil 4 cups of water in a large pot.
2. Crack two eggs into a frying pan and cook for one minute.
3. Once the eggs are cooked remove them from the pan.
4. Add a handful of dried purple seaweed strands into the pan and fry for one minute.
5. Once the water is boiled, put the package of “TaiPing” noodles into the water.
6. In a separate quart sized soup bowl make a sauce of: a teaspoon each of sugar, salt, rice wine and duck oil.
7. After 5 minutes, when the “TaiPing” noodles are cooked and float to the top of the water, drain them thoroughly through a colander.
8. After draining the noodles, put them into the soup bowl with the sauce
9. Mix the noodles and the sauce all together.
10. Add the two fried eggs, the peanuts and the fried seaweed on the top of noodles.
11. Use chopsticks to eat them (Optional) and enjoy the “TaiPing noodles.”
